Truffled super Bunless burger

Ingredients & preperation - Truffled Veggie Pattie

2 cans chickpeas - drain and rinse
2 eggs
1/3 cup gluten free bread crumbs
60ml Truffle oil
Splash olive oil or just use more truffle
1 small broccoli - chop really fine
8 small mushrooms - chop really fine
2 garlic cloves - chop really fine
3 spring onions strands - chop really fine
Small bunch fresh parsley - finely chop
Sea salt
Black pepper

Ingredients & preperation - Burger Filling

Cos lettuce - seperate 4 large perfect cups
2 Tomatoes - thinly slice
Beetroot - thinly slice
Cheddar cheese (we love to use truffle cheddar) - slice into thin strips
Whole egg garlic aioli
Whole mustard seeds  
1 Avocado - thinly slice
1 small carrot - spiralize or peal into small strips
1 small eggplant - slice 4 thin strips
4 x eggs (optional)
Pickels (optional)


  1. Mash chickpeas in a large bowl with a masher or strong fork
  2. In a fry pan , add the mushrooms, broccoli, spring onion and garlic with a lug of truffle oil, sauté until cooked through. Then transfer to the mixing bowl with the mashed chickpeas
  3. Crack one egg into the chickpea mix, add a splash of truffle oil, crack a nice amount of salt and pepper
  4. Then mix it all together with your hands. Keep mixing until it turns into a nice dough like consistency.
  5. Roll into small balls / desired patty size
  6. Crack an egg in a small bowl, Add parsley and whisk until runny
  7. In another small bowl add gluten free bread crumbs
  8. Dip the patty in the egg and then Immediately roll in bread crumbs until nicely coated then flatten and place on a flat tray or plate
  9. Fry the eggplant in a little butter or oil until nice and soft, then set aside
  10. Fry eggs in the same pan and set aside
  11. Panfry the delicious patty in a splash of olive oil - once one side is cooked add cheese on top so that it melts. Once both sides are looking golden and crunchy remove from heat and set aside

Put the stack together
Pick a nice flat plate or chopping board
Place cos lettuce on the base
Add tomato
Add mayo
Add carrot
Add Avocado
Add beetroot
Add more mayo
Add patty with cheese
Add eggplant
Add egg
Add alfalfa

And walla…. Enjoy!
