Down The Rabbit Hole 2018 Mataro

Down The Rabbit Hole 2018 Mataro

The wine is rich and delicate with perfect balance. Big, bright blueberry is accompanied by a hint of spice, and just enough tannin to build structure. With each sip you’ll experience beautiful depth of flavour, and a long, smooth, savoury finish.

Vintage Notes
A wet winter in 2017 set the vines up well for the growing season. Summer and early Autumn were unusually dry, keeping disease pressure low. Favourable summer ripening weather with daytime temperatures in the high twenties, with cool nights, led to fruit in great condition at picking. This translated to a very civilised vintage, with all fruit coming into the winery in outstanding condition and in a very timely fashion.

Winemaking Notes
Harvested in late March, fermented with indigenous yeast. 10 days on skins until dry – a cool ferment to capture the brightness of fruit. Malolactic fermentation took place in stainless steel tank and was then racked into seasoned French oak for maturation, where it remained for 12 months. Vinified with minimal inputs, only sulphur.
